Sheet pan dinners are an absolute life saver in my house. I am so busy these days with blog traffic picking up and the holidays right around the corner. In fact, things are so busy here at Seasonal Cravings that I'm looking to hire a VA. If anyone is interested in helping me with some simple management tasks, let me know in the comments below.
I don't know about you but it's almost impossible to get dinner on the table every night. That's why we sometimes have canned soup or chicken nuggets. Yes, I am a food blogger and I do feed my kids chicken nuggets on a regular basis. I'm only human!

Enter the sheet pan dinner. It a weeknight wonder for sure. Take this Sheet Pan Chicken with Brussel Sprouts.
Get some chicken thighs (bc they have more flavor and don't get dried out like skinless, boneless breasts.) Dose them with olive oil and herbs de Provence. Throw in some veggies cut in similar sizes. Dose those in olive oil and herbs de Provence. Roast at high heat and watch the magic happen.
Look how brown that chicken skin gets and the outside layers of the sprouts. That brown in not burn; it's magic. It gives the sprouts and carrots so much flavor that even your pickiest kiddos can't resist them. It's like candy vegetables (well...almost!)

Sheet Pan Brown Sugar Pork Chops
Trust me, you need to put all of these into your weekly rotation. They are healthy, gluten free and kid approved.
Sheet Pan Chicken and Brussel Sprouts
Ingredients
- 4 skin on chicken thighs
- 1 ½ cups Brussel Sprouts halved
- 4 carrots cut on the bias
- 3 tablespoon olive oil
- 1 teaspoon herbs de Provence
Instructions
- Preheat oven to 400º F.
- Put cut vegetables into a bowl and add 1 ½ tablespoon olive oil, ½ teaspoon herbs and salt and pepper. Rub all over vegetables.
- Place veggies on a sheet pan.
- Add chicken thighs to the same bowl. Drizzle with 1 ½ tablespoon olive oil, ½ teaspoon herbs and salt and pepper. Rub all over chicken.
- Place chicken on pan.
- Roast for about 30-35 minutes or until chicken is done.
- If you prefer a crispier vegetable or chicken skin, turn the oven to broil and cook for a minute or two. Watch carefully or it will burn.

You hit the nail on the head - I feed my fiance popcorn chicken nuggets probably once a week and I'm not even ashamed about it. I've found that it's easy to big batch cook on the weekends when I have some free time and freeze the leftovers in little individual containers so they can be heated up during the week. AND I totally feel you on needing a VA - I work full time and try to blog in my "spare time" but it's proving to be really difficult to swing both. I tried to talk my younger sister into managing my social channels to no avail!
On the upside, this sheet pan dinner sounds so amazing and perfectly simple so I don't get scolded for feeding my husband-to-be chicken nuggets again!
