Are you getting tired of shoveling snow and being stuck inside with stir crazy kids? Well this is dedicated to you! Recently, we were lucky enough to go to St. John in the U.S. Virgin Islands. It’s a quiet spot four miles southwest of Tortola with plenty of nature to discover. Sixty percent of St. John’s twenty square miles is taken up by the Virgin Islands National Park which keeps much of the island unspoiled. I’m ready to move there full-time but I can’t convince hubby to do that just yet.
If you ever have the chance to go – do it. It’s dreamy. So dreamy that it seems almost unreal. There are over 20 beaches you can visit on any given day and each one has bluer water than the last. The mountains make for a dramatic scene and some scary driving! The switchback roads, frequent rains and driving on the left meant that I did not get behind the wheel.
With temperatures between 75 and 85 degrees year round the weather is always good. The rainiest weather is during hurricane season which is July – October. Even when it did rain, it was very brief and we just stayed at the beach under the cover of the mangrove trees. The locals call it perpetual summer. Must be nice!
We snorkeled everyday right from the shore. There was always something to see: brightly colored fish, urchins, turtles, stingrays and even a nurse shark. Trunk Bay has an underwater snorkeling trail with signs. We made friends with the stingray and he hung out with us in the shallows the rest of the day. That was the highlight of the trip for my youngest son.
I gained a new love for coconut rum while vacationing and brought back a recipe to share. It’s called a Coconut Swizzle and was on the menu at every restaurant. It has a delicious summery aroma and since it contains club soda I’m hoping not too many calories. It’s even tastier when enjoyed on the deck with this view…
- 2 limes
- Coconut Rum I used Cruzan
- Club Soda
- Splash of Sprite optional
Fill glass half full with ice.
Add juice from one lime.
Add coconut rum to half full. Top with club soda and a splash of Sprite if using.
Garnish with sliced limes.
