This salad is all about eating the rainbow. Eating a variety of colorful fruits and vegetables ensures that you are getting essential vitamins and minerals in your diet. Not to mention, these vegetables are full of phytochemicals that have disease fighting properties.
This is a perfect, colorful and healthy fall salad that is a regular on our dinner table. The mesclun greens are a simple and delicious base and go with just about any toppings. The yellow and red peppers are appealing to the eye and add lots of antioxidants. The yellow and red tomatoes add sweetness and go well with the basil and tomato flavored feta. The feta is one of my favorite salad secrets. It’s salty and flavorful and goes well in green salads as well as quinoa, rice or millet. It really adds a punch and brings it all together.
Topped with salty pumpkin seeds, it is the perfect fall dish to bring to a luncheon, dinner club or pot luck. The balsamic dressing is a mild and sweet topping that accents the other flavors in the salad. So come on, eat the rainbow! I will post the dressing soon.
