How was your weekend guys? Hope it's getting warm where you are. We had perfect 70-degree weather → perfect for yard work. I have blisters on my hands, thorns in my fingers and an aching back but it feels good to get the job done started. We have four acres out here in the country and we have so much yard work to do.
My husband has a serious obsession with landscaping. He works long hours all week and then enjoys being out in the yard all weekend (key word being enjoys.) And I'm not talking about planting a few perennials here and there. He just bought three river birch trees, two magnolias, and ten sky pencils. This is seriously hard manual labor!
Wish I could say I enjoy weeding but I hate it more than anything. I'd rather clean my 12-year old's toilet any day. I haven't even thought about my plan for the vegetable garden because I just can't wrap my head around it yet.
Needless to say, with all this landscaping activity going on in the Kelly house, I needed quick, easy to clean up and kid friendly food. My daughter makes these Gluten Free Blender Pancakes on her own all the time.
I first saw this idea from Jamie Oliver and I always jump on any one pan, one skillet, one pot, one blender type recipe.
How To Make Gluten Free Blender Pancakes...
Quick and easy is my goal!
Simply put all ingredients in a high powered blender and blend. Add more milk to make them thinner. It's idiot proof.
Top with your favorite toppings.
I've been using Pamela's Pancake Mix for as long as I can remember and always order it in bulk from Amazon. It doesn't taste gluten-free at all and contains almond flour so it's full of protein. Did I mention my kids love the taste and if I ever make a different brand they can tell?
How to Freeze Gluten Free Blender Pancakes for Meal Prep
Lay the leftovers out on a cookie sheet. Freeze for 30 minutes then place them in plastic bags for quick weekday breakfasts. This way the pancakes won't stick together when frozen. I put three each in the small bags for perfect portions for the kiddos. Warm in microwave for 30 seconds to 1 minute.

Gluten Free Blender Pancakes
Ingredients
- 2 ½ cups Pamela's Pancake Mix
- 2 cups milk
- 1 egg
- 2 tablespoon coconut oil melted
- 1 tablespoon pure maple syrup
- chocolate chips
Instructions
- Place all ingredients in blender and blitz until combined. Add more or less milk to get desired consistency.
- Heat griddle and grease with butter. Pour pancakes out straight from blender. If necessary, spread them out with a spoon to get a nice round circle. Sprinkle with 1 teaspoon mini chocolate chips. Flip when edges start to bubble.
- Serve warm with warm pure maple syrup.

Well send him on out to work in the yard/field and you can whip up some delicious treats and pour over some garden books "planning" 🙂 (And I hate weeding too... often just let them take over!) These pancakes look delicious and oh so easy - totally my style first thing in the morning! And pretty much the rest of the day too... 😉

These pancakes are beautiful and you photographed them so well. I love the concept of using a blender for pancakes... I've done it with crepes, but never for pancake batter and now I'm scratching my head for why..?
