Egg and Greens Protein Bowl
- 2 1/2 cups swiss chard (or other greens)
- 1 tbsp olive or coconut oil
- 2 cloves garlic, chopped
- 1/2 cup roasted vegetables, I used butternut squash (optional)
- 2 Happy Egg Co. Free-est of the Free Range Eggs
- salt and pepper to taste
Heat olive oil over medium high heat. Add garlic and saute a minute or two. Add greens and stir gently. Cook until wilted.
Place greens in a bowl. Add a little more olive oil and Crack Free Range Eggs in a skillet. Fry until done to your liking.
Put warm eggs on top of greens and add any roasted vegetables. Salt and pepper to taste.
