Chopped Greek Salad With Sweet Parsley Dressing

Ingredients

  • 1 English cucumber, chopped
  • 1 1/2 cups grape tomatoes, halved
  • 4 mini peppers, chopped
  • 1/4 cup olives
  • 1/2 cup feta
  • 1/2 cup parsley, chopped

Dressing:

  • 1/3 cup olive oil
  • 1 lemon, juiced
  • 1 tsp lemon zest
  • 1 tbsp honey
  • 1/2 cup Italian parsley, chopped
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions

  • In a large bowl combine the veggies, olives, feta and parsley.
  • For the dressing, throw all ingredients into the blender and mix for a few minutes until the dressing turns a lovely shade of green.Top salad with dressing. Add salt and pepper to taste
