- 1 English cucumber, chopped
- 1 ½ cups grape tomatoes, halved
- 4 mini peppers, chopped
- ¼ cup olives
- ½ cup feta
- ½ cup parsley, chopped
Dressing:
- ⅓ cup olive oil
- 1 lemon, juiced
- 1 teaspoon lemon zest
- 1 tablespoon honey
- ½ cup Italian parsley, chopped
- ½ teaspoon salt
- ⅛ teaspoon pepper
In a large bowl combine the veggies, olives, feta and parsley.
For the dressing, throw all ingredients into the blender and mix for a few minutes until the dressing turns a lovely shade of green.Top salad with dressing. Add salt and pepper to taste
