This Green Cauliflower Rice Salad is light, healthy and full of summer vegetables. Cauliflower rice if full of nutrients, fiber and low in carbs. Delicious and refreshing! {gluten-free, paleo, whole30, vegan}
1 12ozpackage of cauliflower rice from Trader Joe'sorganic, frozen
1cupsugar snap peaschopped small
1English cucumberdiced small
3radishessliced thin
1cupred cabbagechopped small
2cupslettuceI used romaine, chopped small
Dressing:
½cupplain yogurt
1cupcilantro
1limejuiced
¼cupgrapeseed or olive oil
3clovesgarlicchopped
salt and pepper to taste
Instructions
Thaw frozen cauliflower rice overnight or in the microwave.
Add all salad ingredients to a large bowl and toss.
Put all dressing ingredients into a blender and mix well.
Add salt and pepper to taste.
Dress salad right before serving.
Notes
Notes: This is vegan, paleo and whole30 without the dressing. This salad can keep in the fridge for a few days if not dressed. The dressing only lasts two days in the fridge before it starts to thicken. Delicious with feta cheese.
