1cupquinoa cooked and cooled
2cupsbaby spinachwashed, dried and chopped into small pieces
1/4cupgrapeseed oilor olive
2tbspred wine vinegar
salt and pepper to taste
Throw all salad ingredients into a bowl and toss gently.
