Gluten Free Blender Pancakes

These Gluten-Free Blender Pancakes are shortcut heaven! Using Pamela's Pancake Mix makes them super easy to whip up, healthy and kid friendly.

Ingredients

  • 2 1/2 cups Pamela's Pancake Mix
  • 2 cups milk
  • 1 egg
  • 2 tbsp coconut oil melted
  • 1 tbsp pure maple syrup
  • chocolate chips

Instructions

  • Place all ingredients in blender and blitz until combined. Add more or less milk to get desired consistency.
  • Heat griddle and grease with butter. Pour pancakes out straight from blender. If necessary, spread them out with a spoon to get a nice round circle. Sprinkle with 1 tsp mini chocolate chips. Flip when edges start to bubble.
  • Serve warm with warm pure maple syrup.
