Ingredients
1
cup
quinoa cooked
I use a rice cooker
1
Honeycrisp apple
cut into thin pieces
1
bunch of watercress
well washed
1
cup
almonds
1
cup
pomegranate arils
Dressing:
3
tablespoon
olive oil
2
tablespoon
pomegranate vinegar or use balsamic
Trader Joe's
1
tablespoon
pure maple syrup
Instructions
Mix dressing ingredients in a small jar and shake well.
Add all salad ingredients in a large bowl and toss.
Add dressing right before serving.
Will keep in the fridge for a few days.
