Quinoa Salad with Watercress, Pomegranates and Apples

Ingredients

  • 1 cup quinoa cooked I use a rice cooker
  • 1 Honeycrisp apple cut into thin pieces
  • 1 bunch of watercress well washed
  • 1 cup almonds
  • 1 cup pomegranate arils
  • Dressing:
  • 3 tablespoon olive oil
  • 2 tablespoon pomegranate vinegar or use balsamic Trader Joe's
  • 1 tablespoon pure maple syrup

Instructions

  • Mix dressing ingredients in a small jar and shake well.
  • Add all salad ingredients in a large bowl and toss.
  • Add dressing right before serving.
  • Will keep in the fridge for a few days.
