Kale and Strawberry Salad

This delicious Kale and Strawberry Salad is full of sweet and salty flavor and topped with a light lemon viniagrette.  {gluten free, paleo}

  • 5 cups kale, chopped
  • 1 1/2 cups strawberries, sliced
  • 1/2 cup pecans, chopped
  • 1/4 cup feta, crumbled


  • 1/3 cup olive oil
  • 1 large lemon, juiced
  • 1 tsp lemon zest
  • 1 tsp pure maple syrup
  • 1/2 tsp dijon mustard (paleo if necessary)


  • Whisk all dressing ingredients together in a small bowl. Pour over kale in a large bowl.  Massage dressing into kale with your hands.  Set aside for five minutes.
  • Top massaged kale with strawberries, feta, and pecans. Toss gently and serve.
