- 5 cups kale, chopped
- 1 ½ cups strawberries, sliced
- ½ cup pecans, chopped
- ¼ cup feta, crumbled
Dressing
- ¼ cup olive oil
- 2 tablespoon balsamic vinegar
- 1 teaspoon pure maple syrup
- 2 garlic cloves chopped
- 2 teaspoon dijon mustard I used grainy mustard
Whisk all dressing ingredients together in a small bowl. Set aside.
In a medium bowl add the baby kale, strawberries, pecans and feta cheese. Pour dressing over top and toss gently.
If you plan to store this salad in the refrigerator for a few days, do not dress it.
