- 3 pieces of salmon
- 1 cup fresh apple cider
- 1 teaspoon honey
- 1 teaspoon grainy mustard
- 2 cups assorted vegetables (zucchini, peppers, onions)
Preheat oven to 400 degrees. Heat apple cider to boiling in a small saucepan. Boil until it reduces by half or about 10 minutes.
Remove from heat and whisk in honey and grainy mustard.
Place salmon on a sheet pan, skin side down. Brush generously with the apple cider sauce.
Place cut vegetables in a bowl and drizzle with olive oil, salt, and pepper and toss well with your hands.
Place vegetables around the salmon.
Cook until salmon is cooked through for about 15-20 minutes. Brush with remaining sauce halfway through.
