- 3 pieces salmon
- 2 tablespoon olive oil
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 1 bunch broccolini
- 1 cup cherry or grape tomatoes
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 lemon
- 1 teaspoon dried basil
Preheat oven to 400 degrees. Place salmon on sheet pan and drizzle with 1 tablespoon of olive oil and salt and pepper.
Place vegetables in a bowl and toss well with 1 tablespoon oil, 2 tablespoon minced garlic and more salt and pepper. Put veggies on sheet pan around the salmon.
Roast for about 15-19 minutes or until salmon flakes.
In another small bowl add 2 tablespoon lemon juice, 2 teaspoon lemon zest and 1 tablespoon honey. Whisk well.
Pour over salmon and veggies after removing from oven and serve immediately. Add more salt and pepper to taste.
