Skinny Watermelon Feta Salad

Ingredients

  • 4 cups cubed seeded watermelon
  • ½ cup fat free feta cheese
  • 2 tablespoon olive oil
  • ½ lime juiced
  • ¼ cup julienned mint

Instructions

  • Add first two ingredients to bowl.
  • Put olive oil and lime juice in a small bowl and whisk well.
  • Pour over salad and top with mint.  Toss gently.  This needs to be made right before serving.  It doesn't sit well in fridge bc the watermelon lets off a lot of water.  

Notes

Watermelon does not keep well after it is cut and tends to get watery.  I would make this right before serving.
