Put olive oil and lime juice in a small bowl and whisk well.
Pour over salad and top with mint. Toss gently. This needs to be made right before serving. It doesn't sit well in fridge bc the watermelon lets off a lot of water.

Watermelon does not keep well after it is cut and tends to get watery. I would make this right before serving.
