- 1 skirt steak, room temp
- 1 cup watermelon, diced into small cubes
- 1 tablespoon jalepeno, seeds removed and diced
- ½ lime, juiced
- 2 tablespoon chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon sea salt
- ¼ teaspoon pepper
Preheat grill to medium-high. Season skirt steak on both sides with cumin, salt, and pepper.
Place on grill and cook for about 4-5 minutes per side for medium-rare.
In the meantime, make the salsa. Toss the watermelon, jalapenos and cilantro with a squeeze of lime. Add salt to taste.
