Sourdough Crepe Recipe

If you want to make a delicious breakfast or a unique dessert then you have to try this Sourdough Crepe Recipe. Super easy to make with just a handful of simple ingredients you can whip up tasty crepes in no time at all. You can use an active starter or discard, whichever you have on hand!

Ingredients

  • 2 cups sourdough starter or sourdough starter discard
  • 2 eggs
  • Some butter or oil for frying
  • a splash of milk to thin out the batter, optional

Instructions

  • Gather all of your ingredients together and preheat your chosen non-stick pan or cast iron non-stick skillet over medium heat. You could also use a crepe pan if you have one. 
  • Melt the butter or pour a little bit of oil onto the pan.
  • Mix the sourdough starter and eggs in a large mixing bowl. If the batter is too thick, use a splash of milk.
  • Pour a little of the sourdough crepe batter into a preheated pan, about ½ cup of batter per skillet or pan. Swirl the pan in a circular motion or spread the batter evenly to cover the whole area. 
     
  • Allow to cook on the first side until almost completely cooked through. You can then flip it over to cook the other side. Be careful to ensure it has cooked enough underneath and is golden brown before flipping. Otherwise, it will break. 
  • Cook for 1-2 more minutes and then place on a plate. You can then add your choice of fillings or top it with something delicious. Enjoy!
