Ingredients

  • 4 skinless chicken breast 19oz / 540g or equivalent weight chicken thighs, cut into 1 inch cubes
  • 2 tablespoon olive oil
  • 2 garlic cloves minced
  • ½ teaspoon dijon
  • ¼ teaspoon red wine vinegar
  • 1 teaspoon oregano or Italian herbs
  • ½ teaspoon smoked paprika
  • ⅓ - ½ teaspoon flaked salt to taste
  • ¼ teaspoon black pepper

Instructions

  • Pat the chicken cubes dry with kitchen paper.
  • Mix the marinade ingredients together in a bowl - olive oil, garlic, dijon, red wine vinegar, oregano or Italian herbs, paprika, salt and pepper.
  • Toss marinade with chicken.
  • Preheat the Air fryer to 400 F. Spray basket with olive oil. Add chicken bites and cook for 10 - 12 minutes until cooked through.
  • Serve with red pepper flakes, parsley and optional drizzle of olive oil.
