Equipment

Ingredients

  • 1.5 lbs chicken thighs 625g, skinless + boneless, chopped into 2 inch cubes
  • ½ teaspoon olive oil plus more to air fry or bake
  • 1 teaspoon onion powder finely chopped
  • 1 teaspoon garlic powder minced
  • 1 medium egg
  • 3 tablespoon tbsp parsley finely chopped (15g / 0.5oz)
  • 2 tablespoon nutritional yeast or 3 tablespoons freshly grated parmesan
  • 1 tablespoon tomato paste or 2 tablespoon finely chopped sun-dried tomatoes
  • 2 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ¾ teaspoon salt
  • ½ teaspoon cracked black pepper

For the Slaw

  • 1 cup white cabbage (100g / 3.5oz) finely shredded
  • 1 carrot (60g / 2.1oz) finely shredded
  • 2 spring onions julienne or grated
  • 2 sticks celery (60g / 2.1oz) finely sliced
  • 2 tablespoon mayonnaise chopped
  • 2 tablespoon Greek yogurt for lighter version you can use 2 tablespoon greek yoghurt and 2 tablespoon mayonnaise
  • 1-2 teaspoon lemon juice to taste
  • Pinch of salt and pepper to taste

Optional extras

  • Cheddar cheese slices
  • Sliced tomato
  • Sliced red onion or caramelised onions
  • Pickles
  • Lettuce
  • Mayo
  • Ketchup

To Serve

  • Brioche buns toasted
  • 1 Avocado slices
  • Dill pickle slices

Instructions

  • Add the chicken thighs to a food processor and pulse using the S blade until roughly minced.
  • Add minced chicken thighs to bowl with 1 teaspoon olive oil, onion and garlic powder, egg, (choose between nutritional yeast or parmesan), tomato puree orsun-dried tomatoes, Italian seasoning, paprika, salt and pepper. Use clean hands to combine.
  • Rub your hands with olive oil. You need to do this to stop the burger mixture from sticking to your hands. Shape into 4 burgers.
  • Mix all the slaw ingredients together in a bowl. Set aside in the fridge.
  • Preheat the air fryer to 190C / 370F and spray the basket with olive. Carefully lift the burgers into the basket (don’t worry they will firm up as they cook!) and cook for 9 minutes or until golden brown on the outside and cooked through on the inside. Option to turn them after 7 mins.
  • Serve burgers in bun with slaw, avocado slices and pickles.
