Bang Bang Salmon Bites

Crispy, spicy and bursting with flavour, these Bang Bang Salmon Bites are a quick and fun way to enjoy seafood. Perfect as a snack, appetizer, or served over rice, they come together in just minutes with a creamy, sweet-heat sauce and a refreshing cucumber salad.

Ingredients

  • 1 ½ pounds / 600g salmon fillets skin removed, cut into bite-sized pieces
  • 1 tablespoon olive oil + more to AF
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon flakey salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chili powder optional

Bang Bang Sauce

  • cup mayonnaise
  • 3 tablespoon cup Thai sweet chili sauce
  • 2 teaspoon sriracha adjust to taste
  • 2 teaspoon lime juice

Cucumber salad

  • ½ large cucumber
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon rice vinegar or apple cider vinegar
  • 1 teaspoon tamari

Optionals To Serve

  • Spring onions
  • Sesame seeds
  • Coriander
  • Chili flakes
  • Lime slices
  • Rice

Instructions

  • In a small bowl, whisk together the bang bang sauce -  mayonnaise, Thai sweet chili sauce, sriracha, and lime juice until well combined. Set aside.
  • In a large bowl, combine the salmon bites, olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and optional chili. Toss until evenly coated with the seasonings.
  • Preheat your air fryer to 400°F (200°C).
  • Place the salmon bites in the air fryer basket in a single layer, making sure they are not overcrowded and spray well with olive oil. You may need to cook them in batches depending on the size of your air fryer. Air fry the salmon bites for 10 minutes, shaking the basket halfway through, until the salmon is cooked through and crispy on the edges.
  • Toss all cucumber salad ingredients together in a bowl.
  • Serve salmon bites with as much bang bang sauce as you like, cucumber, rice and optional toppings.
