Instructions
Preheat the oven to 350°F and grease a 9x13-inch baking dish.
Whisk together the French onion soup, onion soup mix, heavy cream, sour cream, Worcestershire sauce, garlic powder, and black pepper until smooth.
Stir in the Gruyère, Swiss, 1½ cups of the mozzarella, and the Parmesan.
Layer one-third of the potatoes in the dish, then spoon one-third of the sauce over the top. Repeat twice more, ending with a layer of sauce.
Cover tightly with foil and bake for 70 minutes.
Uncover, check that the potatoes are nearly fork tender, and sprinkle the remaining mozzarella over the top.
Bake uncovered for 15–20 minutes, until the potatoes are tender and the cheese is bubbling.
Top with crispy fried onions and parsley, then let rest 15 minutes before serving.
Notes
This casserole can be assembled up to 24 hours ahead and refrigerated unbaked. You can also freeze it unbaked for up to 2 months and thaw it overnight before baking.You can use red potatoes in place of the Yukon gold.Refrigerate baked leftovers covered for up to 4 days.
