Ingredients

  • 3-4 lb Chuck roast
  • 4-5 Potatoes cut into large chunks
  • 3-4 Carrots cut into chunks
  • 1 Large onion sliced
  • 2 cups Beef stock
  • Salt and black pepper to taste
  • Optional: 1–2 tablespoon olive oil for searing

Instructions

  • Preheat oven to 325°F (165°C).
  • Season chuck roast generously with salt and pepper.
  • Heat olive oil in a Dutch oven over medium-high heat. Sear roast on all sides until browned.
  • Add potatoes, carrots, and onion around the roast.
  • Pour beef stock into the pot (around the sides, not over the top).
  • Cover and roast for 3 hours, or until meat is fork-tender.
