- 1 cup black forbidden rice cooked (I used my rice cooker)
- 1 peach chopped small
- 1 cup blueberries
- 1 bunch mint torn into pieces
- Dressing:
- 2 tablespoon olive oil
- 2 tablespoon honey
- juice of 1 lime
- zest of 1 lime
Mix cooked rice with peaches, blueberries, and mint.
In a separate bowl, mix oil, honey, and lime. Pour over rice.
Serve at room temperature.
