    Black Rice With Peaches and Mint

    Black Rice With Peaches and Mint is way healthier and more beautiful than white rice.  It's full of protein, gluten free, easy to prepare and can be used in so many ways. {gluten free}

    Black Rice With Peaches and Blueberries

    The side salad is the hero of the summer cookout. Sure the grilled chicken and steak are a hit but what brings it all together is a salad that can bridge the gap.

    An unusual summer salad like Black Rice With Peaches and Mint can be the centerpiece of a great grilled meal.

    Summer grain salads can go in so many creative directions.

    Like this Black Rice With Peaches, Blueberries and Mint. This is a new combo for me and it’s going to become a staple.

    Fruit and rice sound a bit weird, but it totally works. Forbidden rice has more texture and flavor than regular white rice and holds the flavor of the lime and honey dressing well.

    You could easily substitute nectarines, mangoes or apples for the peaches. I like to pick fruit that is not super ripe. If it’s too soft, it gets mushy in the salad.

    Did I mention that black rice has a deep purple hue?  It's gorgeous!

    • Forbidden rice
    • Quinoa
    • Brown rice
    • Millet
    • Bulgur
    • Wheat berries
    • Buckwheat
    • Sorghum
    • Wild Rice

    Then add some fruit or veggies…

    • Peaches/Nectarines
    • Plums
    • Apples
    • Blueberries
    • Strawberries
    • Cucumber
    • Jicama
    • Tomatoes
    • Red peppers
    • Red onion

    Then add fresh herbs – lots of them…

    • Cilantro
    • Mint
    • Italian parsley

    Top with a simple dressing with fresh citrus….

    • 2 tablespoon olive oil
    • juice of one lime or lemon
    • zest of one lime or lemon
    • salt and pepper to taste

    Black Rice With Peaches and Blueberries

    Ingredients

    • 1 cup black forbidden rice cooked (I used my rice cooker)
    • 1 peach chopped small
    • 1 cup blueberries
    • 1 bunch mint torn into pieces
    • Dressing:
    • 2 tablespoon olive oil
    • 2 tablespoon honey
    • juice of 1 lime
    • zest of 1 lime

    Instructions

    • Mix cooked rice with peaches, blueberries, and mint.
    • In a separate bowl, mix oil, honey, and lime. Pour over rice.
    • Serve at room temperature.

      My trainer has just added Black Rice to my diet, so i was just checking out its health benefits and all. I came across this post and i must say that you have explained things really well. Moreover, with that i just got a wonderful recipe as well.
