    Hope your 2017 is off to a healthy start.  How are those resolutions coming? Hopefully, you made completely manageable resolutions like drink more water, take a daily vitamin or eat more veggies.

    Baby steps people.  It's these healthy habits that can really last a lifetime because they are doable.  I find when I make big changes all at once, I'm more likely to fail.

    Eating more quinoa → now that's a resolution I can get behind.  I've been eating quinoa for years and it's the perfect blank slate for whatever flavor you want to impart.  It tastes light so it doesn't overwhelm the senses. I like to meal prep on the weekends so I often make a big batch of Bob's Red Mill quinoa in my rice cooker.

    It stays fresh in the refrigerator for the week and I add protein and veggies for lunches. It's so easy!  That is one healthy habit that is totally doable and can really change your weekly diet.

    Quinoa is a gluten-free whole grain superfood.  Each ¼ cup serving contains 7 grams of protein and 2 grams of fiber which is why it keeps you full.

    I love that Bob's quinoa is pre-rinsed so I just throw it in my rice cooker or on the stove and it's ready for me in 15 minutes. That's a huge win since we are so busy.

    This Detox Quinoa Salad with Turmeric Tahini Dressing is full of mache greens, scallions, pistachios, and apples. The turmeric tahini dressing is so good, you'll want to slather it on everything.

    You can do that...I won't tell.

    I used Bob's tri-color quinoa but white works too.  If you are making this ahead I would soak the apples in water with lemon so they don't brown.

    Ingredients

    • 1 cup quinoa
    • 1 package mache greens 3.5 oz
    • 4 scallions chopped
    • 2 small apples chopped
    • 1 cup pistachios
    • For Dressing:
    • 3 tablespoon well-stirred tahini
    • 3 tablespoon olive oil
    • 1 lemon juiced
    • ¼ teaspoon turmeric
    • 2 - 3 tablespoon water to thin out
    • salt and pepper to taste

    Instructions

    • Bring 2 cups salted water to a boil. Add 1 cup quinoa and return to a boil, stir. Cover with a tight-fitting lid, reduce heat to medium and simmer for about 12 minutes or until liquid is absorbed. Or you can use a rice cooker.
    • Remove from heat, fluff with a fork and let stand for a few minutes with the lid on.
    • Add all salad ingredients into a large bowl and toss gently.
    • Make dressing. In a jar add all dressing ingredients and shake well. Adjust water to desired consistency. I used 3 tablespoon water.
    • Dress right before serving.

      I am a huge fan of quinoa salads, and this one sounds amazing! I'm with you, it's all about baby steps, and aiming for things that are doable. This salad? Totally doable. I love the sound of that turmeric tahini dressing, too!

      I could use some detox after the holidays thats for sure! This looks great and love how easy it is to make. I actually oven bake my quinoa..crazy I know but it works! Rice too!

      Thank you for this recipe! The flavor and texture are wonderful and it is so satisfying. I couldn't find mache so I used watercress. I wanted to lighten up the dressing a little so I used about 1 tsp tahini (how do you stir it well, anyway?), a little evoo and a large spoonful of non fat greek yogurt along with the other ingredients. It whipped up so creamy and the delicious. The turmeric flavor and crisp apples and creamy quinoa are fantastic. Finished with lots of black pepper too. Thank you for the inspiration!

      Quinoa is one of those things I always have on hand (cooked) in the refrigerator and I LOVE adding it to salads! Naturally I feel like you made this salad just for me! 😉 Seriously, clean eating has never looked so good!!! And I'm dying over that creamy tahini dressing!!! ALL the noms! Cheers, girlfriend!
