Bring 2 cups salted water to a boil. Add 1 cup quinoa and return to a boil, stir. Cover with a tight-fitting lid, reduce heat to medium and simmer for about 12 minutes or until liquid is absorbed. Or you can use a rice cooker.
Remove from heat, fluff with a fork and let stand for a few minutes with the lid on.
Add all salad ingredients into a large bowl and toss gently.
Make dressing. In a jar add all dressing ingredients and shake well. Adjust water to desired consistency. I used 3 tablespoon water.
