This easy Strawberry Crumble is warm, juicy and topped with a golden, buttery oat topping that bakes into the perfect crisp finish. Made with simple ingredients and fresh or frozen strawberries, it's a comforting dessert that's delicious served warm with ice cream, yogurt, or custard.
In a large bowl, combine the strawberries, sugar, gluten-free flour, vanilla extract, and lemon juice, if using.
Transfer the strawberry mixture to an 8-inch baking dish. If using frozen strawberries, there is no need to thaw them first.
In a separate bowl, mix together the oats, gluten-free flour, sugar, and salt.
Add the butter and work it into the dry ingredients with your fingertips until a crumbly mixture forms.
Sprinkle the crumble topping evenly over the strawberries.
Bake for 35–40 minutes, or until the topping is golden brown and the strawberries are bubbling around the edges.
