White Chicken Chili 

Warm, creamy and packed with protein, this slow cooker white chicken chili is comfort food made easy. With tender chicken, beans, sweet corn and a little creaminess, it’s the perfect weeknight meal that your whole family will love.

Ingredients

  • lbs boneless skinless chicken breasts or thighs
  • 1 15 oz can white beans, drained and rinsed
  • 1 15 oz can sweet corn, drained
  • 1 4 oz can mild diced green chilies
  • 1 small onion diced
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • 4 oz cream cheese
  • ½ cup heavy cream or milk added at end

Instructions

  • Place chicken, beans, corn, green chilies, onion, broth and all seasonings into the slow cooker.
  • Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is tender.
  • Remove the chicken, shred it with two forks and return it to the pot.
  • Stir in the cubed cream cheese and heavy cream or milk. Cover and let it melt for 10–15 minutes, then stir until smooth and creamy.
  • Season to taste and serve warm.
