Ingredients

  • 2 cups diced seedless watermelon, lay on paper towel to drain
  • 1 cup diced jicama
  • 2 tablespoon chopped cilantro
  • ¼ cup diced red onion
  • 2 tablespoon fresh lime juice
  • 1 tablespoon brown sugar or honey
  • salt to taste

Instructions

  • Whisk the lime juice and brown sugar. Set aside.
  • Gently toss all the other ingredients and pour on lime juice mixture. Serve with tortilla chips.

Notes

This will store in the refrigerator for only about a day or so because the watermelon starts to break down.  I would make it and serve it immediately for best flavor.
