Watermelon and Jicama Salsa

  • 2 cups diced seedless watermelon, lay on paper towel to drain
  • 1 cup diced jicama
  • 2 tbsp chopped cilantro
  • 1/4 cup diced red onion
  • 2 tbsp fresh lime juice
  • 1 tbsp brown sugar or honey
  • salt to taste


  • Whisk the lime juice and brown sugar. Set aside.Gently toss all the other ingredients and pour on lime juice mixture. Serve with tortilla chips.
