- 4 eggs
- 2 tbsp maple syrup (sugar free if keto)
- 1 cup coconut milk
- 1/2 cup coconut flour
- 1 tsp baking soda
- dash of salt
- 1/2 cup wild blueberries
Preheat a griddle or skillet. Spray with cooking spray or use coconut oil to grease skillet.
Mix all ingredients together except the blueberries.
Whisk well and then fold in blueberries.
Pour into hot pan and cook for about five minutes or until bubbles form, then flip and cook for a minute or two or until done.
