    Paleo Blueberry Pancakes

    Craving a hearty breakfast?  Try these Paleo Blueberry Pancakes made with coconut flour.  They are full of protein with four eggs and will keep you full until lunch.  {paleo, whole30, keto, gluten free}

    Aren't pancakes just the best?  I mean, is there anything more comforting in the world than a hot cup of coffee and a stack of delicious pancakes smothered in pure maple syrup?

    Well, maybe if your kids make them and then clean up the kitchen.  Woo hoo!  Now that's comfort.

    I've been eating these Gluten Free Blender Pancakes for ages and my kids love them but I needed a change.

    As always, I'm trying to avoid gluten and I'm looking for new ways to incorporate gluten free flours into my baking.  This one calls for ½ cup coconut flour and that's it. It will not be the consistency you are used to from all those icky pancake mixes you get from the store - you know the ones I'm talking about.  These are thinner and more hearty because they contain four eggs.  They have a mild flavor thanks to the coconut flour but I added a bit of pure maple syrup to the batter to make it extra yummy.

    The batter will be runny and they need to cook longer than a normal pancake.  Mine took about 6 minutes per side to firm up.

    I used dried wild blueberries because my kids love those in baked goods.  For some reason, they don't like hot fresh blueberries.  Either way, they taste great in these pancakes.

    Ingredients

    • 4 eggs
    • 2 tablespoon maple syrup (sugar free if keto)
    • 1 cup coconut milk
    • ½ cup coconut flour
    • 1 teaspoon baking soda
    • dash of salt
    • ½ cup wild blueberries

    Instructions

    • Preheat a griddle or skillet. Spray with cooking spray or use coconut oil to grease skillet.
    • Mix all ingredients together except the blueberries.
    • Whisk well and then fold in blueberries.
    • Pour into hot pan and cook for about five minutes or until bubbles form, then flip and cook for a minute or two or until done.

      I am anxious to try these Karen because I tried a recipe for Paleo pancakes this past summer and it flopped! Blueberry pancakes are a fave of mine, so I'll let you know how they turn out! So excited to try.
