    Sweet Potato Toast with Egg

    Sweet Potato Toast with Egg is a hearty, wholesome breakfast that will keep you fueled until lunch.  The sweet potato toast is topped with avocado, greens and sunny side up eggs.  {gluten free, whole30, paleo, low carb, keto}

    Sweet Potato Toast with Egg

    AND they stay fresher longer than ordinary eggs.  I don't usually have any left after a few days but it's nice to know that they would still be fresh.

    The folks over at Eggland's Best are committed to producing a more nutritious egg and they do this through their unique hen feed and strict quality standards.  Their hens get a wholesome, all vegetarian feed made from premium ingredients.

    Sweet Potato Toast with Egg

    My family will eat eggs any way they can get them, but I'm always looking for a new way to spice things up.  These Sweet Potato Toasts with EB Eggs are a wholesome, filling breakfast that will keep you satisfied for hours.

    Sweet potato toast is the thing right now and it's such a simple and delicious idea.  All you do is carefully slice your sweet potatoes lengthwise into semi-thin pieces.  Watch those fingers! Then put them in the toaster for about 4 minutes. This will depend on your toaster but I toasted mine five times to get them browned and tender.

    Viola!  Now you have paleo, gluten free, low carb, whole30 approved toast! Amazing, right?

    Sweet Potato Toast with Egg

    Think of the low carb toast possibilities!

    For my Sweet Potato Toasts with Egg, I fried my eggs in a little olive oil until the whites were set.  I topped the sweet potato toast with mashed avocado, greens and those beautiful sunny side up Eggland's Best eggs.  Add some seasoning and you are good to go.

    Honestly, how good does this look when that lovely yolk runs out?

      I want to stick my finger in the screen and scoop up that yolk that you have dribbling off the board. YUM. What a great idea to use sweet potatoes as the toast! This looks so delicious and I can't wait to try it!

      I've been meaning to try making sweet potato toast at home for so long, and this is inspiring! These toasts look so fresh and hearty for breakfast. The eggs look perfect! We usually get Egglands Best eggs too!

      Wow, what a great idea! I haven't made sweet potato toast yet. We made chips with them (I sliced them with my mandolin, used coconut oil and baked them.) I need to try them this way- we go through a ton of eggs in this house!

      Hi! Wondering why this is considered low carb when the sweet potato slices have 22 grams of carbs and two slices if bread have 12 grams? Thanks for clarifying.

        Hi Cat, Its hard to get the nutrition facts exactly right on these because the sweet potatoes are sliced and I have no way of putting two slices of potato into my nutrition calculator. Sorry about that! Is a slice of sweet potato lower in carbs than toast? For sure!
