Put all vegetables in a bowl and drizzle with olive oil. Sprinkle with salt and pepper and mix well with hands. Be sure all vegetables are covered in oil.
Assemble skewers. Be careful to keep pieces similar sizes. If some are too big they prevent others from sitting directly on the grill.
Feel free to drizzle entire skewer with a bit more oil. Place on grill and cook 5-8 minutes on each side. Watch carefully and turn often to prevent burning.
Serve immediately with rice, quinoa or cauliflower rice and a simple tossed salad.
