    These Chicken Sausage Skewers with Vegetables are so easy to make and perfect for your next grilling night.  The sausage is packed with flavor and grilling the vegetables gives them all those flavor enhancing grill marks.  {paleo, whole30, gluten free, keto}

This is a sponsored conversation written by me of Aidells© Sausage Company.  The opinions and text are all mine.

Chicken Sausage Skewers with Vegetables on skewers on a cutting board

Spring is being a little shy around here this year and I am starting to wonder what's going on.  Normally we would have already grilled out for dinner numerous times at this point in the year.

Luckily I think the weather is turning around this week and I am dreaming of late nights outside with the smell of grilled sausage in the air.

Aren't you getting tired of burgers and dogs?  I know I am and I think possibly even my kids are!  It's time for a change people and I've got the answer for you...Chicken Sausage Skewers with Vegetables.

Grilling meat and vegetables does something magical to the flavor, don't you think?  I love seeing those grill marks and I know it's the BEST way to add flavor to otherwise boring vegetables.  I usually keep grilled vegetables in the fridge during the summer months for meal prep.  Add them to a salad or quinoa and you've got lunch!

    Package of Aidell's Chicken Sausage

For these Chicken Sausage Skewers with Vegetable, I used Aidells Chicken Apple Sausage which I purchased at Harris Teeter.

I have been eating these for years and I love them.  They are simply made with premium ingredients in small batches and it shows.  This sausage is full of Washington state farm apples and lots of spices.  They are packed with flavor and so versatile which makes them great for quick, weeknight dinners.  I just brushed these skewers with olive oil and sprinkled on salt and pepper and that was it.  Delicious!

I also enjoy Aidells Chicken Apple Sausage on pizza, in salads and in sandwiches.  This recipe made a great sausage and veggie packed pita the next day for lunch! I also enjoy their other flavors; Cajun Style Andouille, Italian Style and Spicy Mango with Jalapeño.

More quick dinner ideas using Aidells Chicken Apple Sausage...

    • sausage and vegetable hash
    • add it to a quiche
    • sausage tacos, fajitas or quesadillas
    • sausage burgers
    • sausage wraps
    • add it to your favorite vegetable soup
    • mini skewers with cheese as an appetizer
    • over polenta
    • add it to pasta salad
    • use in lasagna

    The possibilities are endless!

Chicken Sausage Skewers with Vegetables on a cutting board

I bought my Aidells Chicken Apple Sausage from Harris Teeter which is right around the corner from my house.  Did you know that Harris Teeter has ExpressLane where you shop for groceries online then when you drive up and they load your groceries in your car?  Let me tell you it's pretty dreamy.  I tried it when we got back from our spring vacation and I loved it. They really picked my items with care and they called me to ask about swapping any item that was out of stock.

You know how stressful meal planning, shopping and cooking can be.  ExpressLane can help!  Once you put your order in your list is saved.  How cool is that?  Now, all I do is go in and add whatever new items we need for that week's meals, remove a few things and I'm done.  AND I don't even have to shop for it. It's truly amazing and I think you should give it a try.  I promise you will have a better week if you do.  😀

Not only can you shop there but you can find yummy recipes on their website.  There are a lot of simple, healthy recipes that you can add to your weekly meal rotation.  Click here to visit Harris Teeter and shop their recipes today. Ingredients

    • 1 12 oz package of Aidells Chicken Apple Sausage
    • 1 zucchini, sliced into rounds
    • 1 yellow squash, sliced into rounds
    • 1 cup mini peppers
    • 1 tablespoon olive oil
    • salt and pepper

    Instructions

    • Preheat your grill to medium high.
    • Put all vegetables in a bowl and drizzle with olive oil. Sprinkle with salt and pepper and mix well with hands. Be sure all vegetables are covered in oil.
    • Assemble skewers.  Be careful to keep pieces similar sizes.  If some are too big they prevent others from sitting directly on the grill.
    • Feel free to drizzle entire skewer with a bit more oil.  Place on grill and cook 5-8 minutes on each side.  Watch carefully and turn often to prevent burning.
    • Serve immediately with rice, quinoa or cauliflower rice and a simple tossed salad.
