Ingredients
Gather your ingredients ahead of time. If you love Asian cooking, you might already have a bunch of these ingredients at home already:

Tender strips of flank or sirloin steak are seared in light olive oil until beautifully browned, then tossed in a glossy sauce made with gluten free tamari, brown sugar, fresh garlic and zingy ginger.
Crisp broccoli florets add freshness and color, while a sprinkle of toasted sesame seeds and sliced spring onions finish the dish with a savory crunch and a hint of brightness.

Instructions
Check out these simple steps to getting the perfect beef and broccoli:

- Step 1: Season the beef with salt and pepper.

- Step 2: In a small bowl, whisk the starch with tamari, brown sugar, garlic, and ginger and set aside. (If using gelatin, mix it just before adding to prevent thickening too soon.)

- Step 3: Heat oil in a large non-stick pan over medium heat. Cook the broccoli for about 3 minutes until tender.

- Step 4: Sear the beef for 4 minutes without stirring, then flip and cook for 1-2 minutes more until done. Remove and set aside.

- Step 5: Return the beef to the pan, pour in the sauce, and simmer for 1 to 3 minutes until thickened. Serve topped with spring onions, sesame seeds and optional rice.
Hint: Use a good-quality, large non-stick pan or a cast-iron skillet for the best results.
Substitutions
Try out these ingredient alternatives:
- Tamari sauce: Swap for coconut aminos or regular soy sauce for a slightly different flavor.
- Flank or sirloin steak: Use chicken breast, chicken thighs or firm tofu for a lighter or vegetarian option.
- Brown sugar: Replace with maple syrup, honey or coconut sugar for a different sweetness profile.

Variations
I like sometimes to take this beef and broccoli recipe in different directions:
- Spicy: Add red pepper flakes or a splash of sriracha to the sauce for a kick of heat.
- Extra garlicky: Increase the garlic and finish with extra toasted sesame seeds and a drizzle of sesame oil for a nutty twist.
- Beef and broccoli with mushrooms: Add sliced shiitake or button mushrooms alongside the broccoli for extra umami.
Equipment
I used a sharp knife and a cutting board to prep the ingredients. A small mixing bowl for the sauce, whisk or fork and a large non-stick frying pan, wok or even a skillet.
You'll also need a spatula or wooden spoon.

Storage
Store leftovers in an airtight container in the refrigerator for 3 days or in the freezer for 2 months.
Top tip
Let the beef sear undisturbed before flipping to get a nice caramelized crust and maximum flavor.
FAQ
Yes! You can slice the beef and chop the broccoli in advance. Keep them separate in the fridge and combine just before cooking to ensure the beef stays tender and the broccoli crisp.

Beef and Broccoli
Ingredients
- 2 tablespoon cornstarch or tapioca starch
- ⅓ cup + 1 tablespoon Gluten Free tamari sauce or soy sauce
- 2 tablespoon light brown sugar
- 4 garlic cloves minced
- 2 teaspoon grated fresh ginger
- 2 tablespoon light olive oil or grape seed oil divided
- 1 lb flank or sirloin steak cut into thin 1-inch thin strips
- ¼ teaspoon salt
- ½ teaspoon black pepper
- 4 cups small broccoli florets 300g / 10.5oz
- 2 spring onions finely sliced
- 1 teaspoon sesame seeds toasted
Instructions
- Season the beef with ¼ teaspoon flakey sea salt and pepper.
- In a small bowl, whisk together the corn or tapioca starch with the soy sauce, brown sugar, garlic and ginger. Set the sauce aside. If using bovine gelatin mix just before adding to the beef and broccoli so it doesn't thicken too quickly.
- Heat 1tbsp olive oil in a large non-stick frying pan over a medium heat. Add the beef and let it cook undisturbed for about 4 minutes (not stirring is what will give it a good sear.) Flip the beef sliced and then cook for 1 - 2 minutes more on the other side until cooked though. Set aside.
- Add the remaining 1 tablespoon of oil to the pan and once hot, add the broccoli florets and cook, stirring occasionally, until the broccoli is tender, about 3 minutes.
- Add the beef back to the pan with the broccoli and add the sauce. Bring to a simmer and cook for 1 - 3 minutes until the sauce thickens to your liking. Serve with spring onions, sesame seeds and optional rice.
