I'm using budget-friendly beef stew meat in the recipe, which turns fork tender over the long cook time. Chuck roast cut into chunks works just as well if that's what's on sale!
Steak seasoning can stand in for the black pepper and garlic powder if you usually keep it in your pantry.
Slice the sweet onion thick so it holds its shape instead of melting away completely, and a regular yellow onion works fine if sweet onions aren't available.
Baby bella mushrooms (sometimes called "cremini mushrooms") are what I used, but you can use regular sliced white mushrooms if that's what you have on hand.
The brown gravy mix and dry Italian dressing mix are the shortcut that gets the gravy tasting like the restaurant version without a long ingredient list, and you'll find both in the seasoning aisle near the au jus and taco seasoning packets.

How to Make Texas Roadhouse Beef Tips
- Season the beef. Place the stew meat in the bottom of a 6-quart slow cooker and sprinkle it with black pepper and garlic powder.
- Layer on the onions and mushrooms. Scatter the sliced onion and mushrooms evenly over the top of the beef. They'll cook down right where they sit, so there's no need to stir them in yet.
- Mix up the gravy and pour it over. Add the beef broth, brown gravy mix, Italian dressing mix, Worcestershire sauce, and steak sauce to the slow cooker and stir until everything is combined.
- Cook low and slow until the beef is tender. Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours, until the beef is fork tender.
- Thicken the gravy. Whisk the cornstarch and cold water together in a small bowl until smooth, then stir it into the slow cooker. Cover and cook on HIGH for another 20 to 30 minutes, until the gravy has thickened.
- Stir everything together and serve. Gently stir the beef, onions, and mushrooms into the thickened gravy, sprinkle with parsley, and serve over mashed potatoes, seasoned rice, or buttered egg noodles.
