Your kids will love these Fresh Corn and Bean Nachos for dinner or an after-school snack. Loaded with fresh summer corn, kidney beans, jalapenos, and cheese. They are impossible to resist. {gluten free}
Boo, hoo! The kids are back in school today and it's so quiet at the Kelly house. I am happy to see them getting back into the routine, going to bed early, doing homework and playing sports but it's always a sad day for me. They seemed to be in pretty good spirits and trust me it's not that way every year.
There's a lot of finesse that goes into parenting. Do you know what I'm talking about?
Maybe I spoil my kids but I'm constantly thinking of ways to avoid pitfalls - pitfalls that will cause them to have a breakdown. I make sure they have everything ready the night before. I do not do it for them but nag them until it's done...clothes laid out, binder prepared, snacks packed and alarm set.
In the morning I make sure they are up in plenty of time. They like to have some downtime to sit on the couch and stare into space. Trust me, we've woken up late one too many times and it's not pretty. I play music in the kitchen in the morning and try to sit with them and connect. After all, it's a long school day and I miss them! Hugs and I love yous are a must every morning.
With that being said, we have some rough mornings. Lost homework, broken shoe laces, uniforms not clean (oops!), nothing for lunch, lost belts and broken alarm clocks. You'll hear about those soon, I'm sure.
How happy would your kids be to have Fresh Corn and Bean Nachos for dinner? We do this way more than I would like to admit. Nachos are in fact my favorite food on earth.
It seems so decadent to have nachos for dinner but it doesn't have to be. These are loaded with fresh corn, kidney beans, and cheese.
If you don't want to saute your fresh corn like this you can easily Roast it in the Oven.
What is the Best Cheese for Nachos?
- Cheddar
- Monterey Jack
- American
- Pepper Jack
- Queso
- Mexican (my kids love the mixed Mexican cheese)
Nachos can be the perfect blank slate dinner for weeknights. Make it seasonal or use up some leftovers.
Toppings For Nachos ...
- use kidney, black, garbanzo or pinto beans
- add fresh sauteed veggies like zucchini, broccoli or peppers
- add protein like chicken, pulled pork, ground beef, shrimp or fish
- black or green olives
- cheddar, Monterey jack or Colby cheese
- top with fresh tomatoes, green onions, lettuce, avocado, sour cream or guacamole
Bean Nachos
Ingredients
- 2 ears of fresh corn
- 1 tablespoon olive oil
- ½ 12 oz bag tortilla chips
- 1 can red kidney beans drained and rinsed
- 6-8 sliced refrigerated tricolor jalapenos chopped
- 2 cups shredded cheddar cheese
- avocado and cilantro for garnish
- tomatillo salsa for dipping
Instructions
- Preheat oven to 400°.
- Cut corn off the cob.(I use a bundt cake pan for this.)
- Heat a cast iron or other skillet over medium-high heat and add 1 tablespoon olive oil.
- Saute corn for about 5 minutes or until it starts to get a bit charred. Stir frequently.
- Remove from pan and set aside.
- Spread about ⅓ of the tortilla chips into your skillet.
- Top with ⅓ of the warm corn, kidney beans, and cheese. Repeat.
- Cook for about 15 minutes or until cheese gets gooey.
- Top with jalapenos, cilantro, and avocado.
- I like to serve mine with tomatillo salsa.

One thing I've realized Karen is the more I forget, the more they remember. I'm guilty of wanting everything in order to the point of obsessing. Funny thing is, once I lay off of bit, they surprise me by filling in the blanks. Let's hope it continues into the school year!! And yes, yes, yes to nachos for dinner! Nachos for dinner is something that I am so thankful for. Just when I think we have nothing in the house to eat, I rummage through the pantry and refrigerator and suddenly a sheet pan of hot and melty nachos are sitting in front of me. This particular batch of nachos looks absolutely incredible, I'm going to need to add corn to ours next time!
