Grilled Steak Tacos with Cucumber and Corn Salsa are the perfect summer dinner.  Spicy skirt steak topped with the freshest cucumber and grilled corn salsa.  (gluten free)

This post is sponsored by Beaujolais Wines but all opinions are my own.

Grilled Steak Tacos With Cucumber and Corn Salsa

One of the best things about summer is GRILLING.  No need to get the kitchen all toasty just head outside to the grill and start cooking these Steak Tacos with Cucumber and Corn Salsa.

My family is in love with skirt steak and they could eat it seven days a week.  Add a handful of smoky spices for the rub and they love it even more.  I used cumin, cinnamon, chili powder, and garlic. So much flavor!

    grilled Steak Tacos with salsa

Grilled skirt steak tacos taste delicious with all sorts of fresh salsas.  Summer seasonal produce at its best. I made a super fresh and simple cucumber and grilled corn salsa. Add some jalapenos, red onion, cilantro and lime and you are good to go. This is also a great topper for fresh fish or grilled chicken.

    Summer cooking is so easy!

We love using skirt steak for our tacos because it's full of flavor.  Grilling it takes only a short time because it's so thin so be sure to watch it carefully.  Always slice it against the grain to ensure it's tender.  It works great as leftovers and my kids ate this the next night in their quesadillas.

Woo hoo, two for one dinner!

A summer meal wouldn't be complete without the perfect glass of wine.  I am so happy to have found a red wine I enjoy as much as white.  I am traditionally a white wine drinker and find some reds to be a bit too bold for me.

I love this Côte de Brouilly, which is one of the 10 Beaujolais Crus!  It is a red wine that appeals to white wine drinkers like me.  With aromas of fresh grapes and iris, it's still delicate and perfect for summer.

Up Your Beaujolais Game! from Honest Cooking on Vimeo.

I like to serve it at room temperature or with a slight chill.  It's perfect for summer parties on the patio or nights by the fire with smores.  It's versatile enough to be served with beef, chicken, pork or fish.  Trust me, it's a huge summer win!

Embrace summer grilling before it's too late.  Call up some friends and invite them over for these simple Steak Tacos with Cucumber and Corn Salsa.  You can make the salsa ahead and prepare all your toppings.  Then you are free to sit back enjoy a glass or two of your Beaujolais while hubby works hard at the grill.

    Cheers to summer grilling!

As much as I love grilling during the summer, I actually prefer grilling in the fall because the weather is so nice you can just grill and then eat outside comfortably without sweating profusely! 😉 Needless to say, these tacos are going on our dinner rotation for the next few months! The steak looks perfect and I'm ALL about some corn! Cheers, friend!
