I'm not sure what happened but I flipped the calendar from April to May and our lives hit overdrive. May is the single. busiest. month. here at our house. Our kids are involved in six sports between them and there are so many end of the school year activities showing up on the calendar.
I can't wait for summer to get here!
This is when I need healthy foods to keep me going. When I eat right, I can tell that I have more energy, more patience for my kids (and husband!) and I even sleep better. This Sweet Potato Noodle Stir Fry with Steak is a prime example of a meal that fuels me to be my best. Sorry, sounds corny, but it's true!
I like sweet potato noodles better than zucchini noodles because they maintain their firmness when you cook them. They can easily stand up to being tossed around in a stir fry with no problems. The zucchini noodles can sometimes fall apart if they aren't cut thick enough.
The sweet potato noodles have a great flavor and add a bit of sweetness to go with the savory stir fry sauce in this Sweet Potato Noodle Stir Fry with Steak. This one has sugar snap peas, onions, and thinly sliced steak. I always pop the steak in the freezer for about 10 minutes and this allows me to cut the meat thinly.

How to make sweet potato noodles...
- buy them pre-made since they are sold everywhere now (that's what I did this time)
- use this cool new julienne peeler by Kuhn Rikon (on my Mother's Day list)
- use this handy dandy Veggetti tool
- use a spiralizer
- use a mandoline (be careful!)
Sweet Potato Noodle Stir Fry with Steak
Ingredients
- 2 cups sweet potato noodles
- 1 small onion, sliced
- 1 cup sugar snap peas
- 1 pound beef sirloin, flank or skirt steak, sliced thin
- 2 tablespoon sesame oil
- 2 tablespoon hoisin sauce, gluten free if necessary
- ¼ cup tamari, or soy sauce if not gluten free
- 3 tablespoon garlic, chopped
- 1 tablespoon ground ginger
Instructions
- Freeze sirloin for 30 minutes before slicing. This will make it easier to cut.
- Whisk hoisin sauce, tamari, garlic and ginger in a small bowl. Set aside.
- Heat a non-stick skillet over medium-high heat and add 1 tablespoon of sesame oil.
- Cook steak for a minute or two. Add a bit of the stir fry sauce and toss to coat. Remove steak from pan and set aside.
- Heat another tablespoon of sesame oil in same pan. Add all vegetables and cook for about 5 minutes, stirring frequently.
- Add steak back to pan and all of stir fry sauce. Toss gently to coat and cook for another minute.
- Serve immediately with scallions for garnish.
