    Listen, you know I am all about balance here at Seasonal Cravings.  I do best with smart eating when I take small steps like no pasta during the week.  I’ve been doing that for years now and I think it really helps me have a more balanced diet.  I make pasta and rice for the kiddos but I always have zucchini noodles or cauliflower rice in the fridge for myself. That step alone makes a huge difference for me and it’s not hard to do. Cleary everyone else is on the bandwagon too because you can get fresh zucchini noodles premade for you in most grocery stores.

    That's a win, win in my book.  Don't tell me you don't have time...

    How To Make Zucchini Noodles

    • I made mine using this tool that my friend gave me.  I like it because it's easy, doesn't take up much space in my cabinet and cleans in less than two minutes.  Did I mention it's less than $10?
    • Use a box grater.  Cut long strips holding the zucchini lengthwise.  This is not as neat and tidy but it works.
    • Use a mandoline to make 3 mm strips. This will give you a thicker "noodle."
    • Get a fancy spiralizer.

    Zucchini Noodle Stir Fry with Chicken

    Ingredients

    • 2 tablespoon hoisin sauce gluten-free if necessary
    • ¼ cup tamari
    • 3 tablespoon garlic chopped
    • 1 tablespoon ground ginger
    • 4 chicken thighs trimmed of fat and cut into cubes
    • 1 pepper sliced
    • 1 cup sugar snap peas
    • 3 scallions chopped
    • 2 zucchini spiralized
    • sesame oil for pan
    • toasted sesame seeds for garnish

    Instructions

    • Whisk first four stir-fry sauce ingredients together in a small bowl and set aside.
    • Heat a skillet over medium-high heat and add 1 tablespoon sesame oil.
    • Add chicken and cook for about 5 minutes or until done or still slightly pink, stirring often. Add a few tablespoons of stir fry sauce and give it a quick stir.
    • Remove chicken to a bowl and set aside.
    • Heat another tablespoon sesame oil in the pan and add sugar snap peas. Cook for a minute then add peppers, scallions and zucchini noodles. Add another few tablespoons of the stir fry sauce and stir, cooking for about 5-7 minutes.
    • Add chicken back to pan and add remaining stir fry sauce. Cook for another minute.
    • Serve with toasted sesame seeds and green onion for garnish.

      I just recently picked up a spiralizer and have a zucchini noodle recipe coming up. So fun to use that thing and I just love the taste of the noodle and honestly don't even miss the standard noodle one peck! Stir fry is definitely a go to around our home and love that you can easily use up veggies in the fridge and prepare a delicious meal. Love the toasted sesame seed garnish. This looks like one healthy, hearty dish 🙂

      looks very tasty & healthy! I haven't gotten around to making zucchini noodles yet, in part b/c I like regular pasta a lot. But I should try as a way of getting more veggies on the plate.

      This is what I am going to have all summer! Love zoodles and this sounds so flavorful! Don't have tamari but I guess soy sauce will work.
