    Almond Butter Chocolate Chip Cookies

    These Almond Butter Chocolate Chip Cookies taste so good, you won't notice they are healthier. They are easily made with only six ingredients.  Oh so satisfying and the perfect treat to help you meet your New Year's goals.  {gluten free, dairy free}

    I can never have enough chocolate chip cookie recipes. I have your basic Gluten Free Chocolate Chip Cookies and Five Ingredient Peanut Butter Chocolate Chip Cookies and I even have Single Serve Gluten Free Chocolate Chip Cookies! 

    Trust me we will never run out of cookies around here. These Almond Butter Chocolate Chip Cookies are unique because they are grain free and only contain a few ingredients. It's the type of cookie you can whip up at the last minute when you have a craving.

    Ingredients

    • almond butter
    • coconut oil
    • coconut sugar
    • egg
    • baking soda
    • almond extract (optional)
    • chocolate chips

    Instructions

    1. Preheat oven to 350º F.
    2. Mix all ingredients in a large bowl.
    3. Scoop with a mini ice cream scooper onto a parchment-lined cookie sheet.
    4. Bake for about 9-11 minutes.

    Substitutions and tips

    • If you don't have almond butter, you can use any nut butter.  I recommend using natural nut butters with no added sugar.  I have had success with peanut butter and cashew butter in the recipe.  Both are delicious. 
    • If you don't have coconut sugar you can use regular white sugar. I have not tried substituting pure maple syrup or honey but it might work.
    • I prefer to use Enjoy Life Chocolate Mini Chips which are gluten free and vegan. They are so tasty!

    Ingredients

    • 1 cup all natural almond butter
    • ½ cup chocolate chips make sure they are keto or paleo approved if necessary
    • ½ cup coconut sugar
    • 1 egg
    • 1 teaspoon baking soda
    • ¼ teaspoon almond extract optional

    Instructions
