I can never have enough chocolate chip cookie recipes. I have your basic Gluten Free Chocolate Chip Cookies and Five Ingredient Peanut Butter Chocolate Chip Cookies and I even have Single Serve Gluten Free Chocolate Chip Cookies!
Trust me we will never run out of cookies around here. These low carb Flourless Chocolate Chip Cookies are unique and nontraditional because they are grain free and only contain six pantry staple ingredients.It's the type of cookie you can whip up at the last minute when you or your family have a sweet tooth craving. They are easy to make but good enough to serve to company.
I love that these have a deep flavor because of the almond extract and coconut oil. The edges get crispy while the middle stays soft and melty.
It can be challenging to make gluten free cookies but these are super easy and require no fancy ingredients like xanthan gum.
Ingredients for Flourless Chocolate Chips Cookies
- almond butter - You can also use natural peanut butter, crunchy peanut butter, cashew butter or sunflower seed butter. Hello, peanut butter cookies!
- coconut oil - I love the flavor of coconut oil in cookies.
- coconut sugar - You can replace this with white sugar or brown sugar if desired.
- egg - Room temperature eggs work best. You can also substitute a flax egg or vegan butter for a vegan option.
- baking soda - Make sure it's not expired.
- almond extract (optional) - I love the flavor of almond extract, especially when using almond butter but you can substitute pure vanilla extract too.
- semi-sweet or dark chocolate chips - I prefer Enjoy Life Chocolate Chips which are gluten-free and dairy-free plus taste the best.
Instructions for Flourless Chocolate Chip Cookies
- Preheat the oven to 350º Fahrenheit.
- Mix all ingredients in a large mixing bowl.
- For best results use a small cookie scoop to scoop them onto a parchment paper-lined baking sheet with cookie dough balls an inch or two apart.
- Bake cookies on center rack for about 9-11 minutes or until golden brown.
- Let cool on a cooling rack and serve. You can store this for about four to five days on the counter in an airtight container or a Ziploc bag.
Tips for Making the Best Flourless Cookies
- If you don't have almond butter, you can use any nut butter. I recommend using natural nut butter with no added sugar. I have had success with peanut butter and cashew butter in the recipe. Both are delicious.
- If you don't have coconut sugar you can use regular white sugar. I have not tried substituting pure maple syrup or honey but it might work.
- I prefer to use Enjoy Life Chocolate Mini Chips which are gluten free and vegan. They are so tasty!
- Be sure to use parchment paper to line your cookie sheets so your cookies don't stick.
- Because these are made with no flour the dough might be a little different from what you are used to. Trust me it will work out in the end once they are baked.
- If you want to freeze these cookies, go ahead and place the formed cookie dough balls on a cookie sheet and transfer to the freezer for about an hour. Remove from freezer and transfer to a Ziploc bag to go into the freezer for two to three months. Freezing them beforehand will keep them from sticking together. Be sure to write the date and cooking instructions on the outside of the bag.

Ingredients
- 1 cup all natural almond butter
- ½ cup chocolate chips make sure they are keto or paleo approved if necessary
- ½ cup coconut sugar
- 1 egg
- 1 teaspoon baking soda
- ¼ teaspoon almond extract optional
Instructions
- Preheat oven to 350º F.
- Mix all ingredients in a large bowl.
- Scoop with a mini ice cream scooper onto a parchment lined cookie sheet.
- Bake for about 9-11 minutes.
