Do you ever feel like you just haven't been taking good care of yourself? Your body is telling you to drink more water, eat more veggies, and less gluten? There are so many ways my body tells me this; bloating, dry skin, lack of energy, sugar cravings, trouble sleeping, and so on.
It's green smoothie time. It's hard to commit to a complete and 100% overhaul of your diet, like giving up dairy and gluten. But the small steps are the most important. Ingredients
- kale - Feel free to swap out the kale for spinach if you prefer a milder tasting green.
- goji berries - These babies are loaded with nutrients like fiber, Vitamin C, and antioxidants. They make a great topper for smoothie bowls too.
- coconut water - Coconut water contains electrolytes and potassium and can be a fun way to mix up your smoothies now and then.
I've been drinking green smoothies for a long time and my most important tip is to make sure it's cold - add a few cubes of ice. It really makes the kale more palatable. Trust me, a room temperature green smoothie will make you stay away from them for life. This one has no sugar and is sweetened with goji berries and coconut water. It's full of healthy green goodness and hydrates your body too.

Green Goji Berry Smoothie
Ingredients
- 2 cups kale torn from stem
- 2-3 tablespoon goji berries
- 1 ½ - 2 cups coconut water
- 3-4 cubes ice
- optional add-ins: chia seeds flax seeds or cocoa nibs
Instructions
- Throw all ingredients into a blender and puree until combined.
- Pour into a glass, add a straw and be proud of yourself.

I've been making vegan green smoothies everyday since meeting with a nutritionist who said it's the best and easiest way to up your vegetable intake. I'll have to look out for goji berries - they sound like an interesting addition!
