    Green Goji Berry Smoothie

    This Green Goji Berry Smoothie will give your body the nutrients and hydration it deserves with kale, goji berries, and coconut water.  It requires only three ingredients and tastes great. {gluten free, keto, whole30, paleo and vegan}

    Do you ever feel like you just haven't been taking good care of yourself?  Your body is telling you to drink more water, eat more veggies, and less gluten?  There are so many ways my body tells me this; bloating, dry skin, lack of energy, sugar cravings, trouble sleeping, and so on.

    It's green smoothie time.  It's hard to commit to a complete and 100% overhaul of your diet, like giving up dairy and gluten.  But the small steps are the most important.  Start with a small step and be focused on keeping up with it.  It takes a long time to form a habit.  If you want to learn more about drinking green smoothies, try my Green Smoothie Recipes for Beginners. 

    How about one green, veggie-filled smoothie per day?

    One beautiful green smoothie a day?  Fill it with seasonal goodness.  Swap out the goji berries for raspberries or strawberries. Whatever is in season.   I know you can.  Are you with me?

    Ingredients

    • kale - Feel free to swap out the kale for spinach if you prefer a milder tasting green. 
    • goji berries - These babies are loaded with nutrients like fiber, Vitamin C, and antioxidants.  They make a great topper for smoothie bowls too.  
    • coconut water - Coconut water contains electrolytes and potassium and can be a fun way to mix up your smoothies now and then.

    I've been drinking green smoothies for a long time and my most important tip is to make sure it's cold - add a few cubes of ice.  It really makes the kale more palatable. Trust me, a room temperature green smoothie will make you stay away from them for life. This one has no sugar and is sweetened with goji berries and coconut water.  It's full of healthy green goodness and hydrates your body too.

    What better way can you think of to start your day?  I usually eat this with eggs or something else containing protein.  Or I have it in the late afternoon to keep me away from handfuls of Enjoy Life Chocolate Chips.  Sometimes I'll drink one before bed because it's a freebie. Better for me than ice cream!

    Ingredients

    • 2 cups kale torn from stem
    • 2-3 tablespoon goji berries
    • 1 ½ - 2 cups coconut water
    • 3-4 cubes ice
    • optional add-ins: chia seeds flax seeds or cocoa nibs

    Instructions

    • Throw all ingredients into a blender and puree until combined.
    • Pour into a glass, add a straw and be proud of yourself.

      I can do it Karen!! And I love kale smoothies. I've never tried to add goji berries, so these are on my list of things to try!

      I don't think that I've ever tried goji berries, but it sounds like they work well in this recipe.

      I've been making vegan green smoothies everyday since meeting with a nutritionist who said it's the best and easiest way to up your vegetable intake. I'll have to look out for goji berries - they sound like an interesting addition!
