    Sheet Pan Lemon Garlic Salmon with Broccolini

    Sheet Pan Lemon Garlic Salmon with Broccolini can be cooked and on the table in less than 30 minutes.   The salmon is covered in a delicious lemon garlic drizzle.  {gluten free, paleo, Whole30}

    Fast and healthy has been the theme around here at Seasonal Cravings lately.  I mean who doesn't need fast and healthy recipes that can be on the table in less than thirty minutes?  This Sheet Pan Lemon Garlic Salmon with Broccolini is inspired by my longtime love of sheet pan dinners.  I mean what could be easier?

    Preheat oven.

    Put meat or fish on a sheet pan.

    Put chopped veggies on a sheet pan.

    Drizzle everything with olive oil, salt, pepper and any other spices your heart desires.

    Toss well with hands and cook for under 30 minutes.

    Put feet up...or by that I mean, quiz daughter on social studies flash cards and review son's essay due tomorrow.  😜Sheet Pan Lemon Garlic Salmon with Broccolini

     

    The flavor of salmon is so light and mild that it does really well with garlic and lemon.  I whisked the fresh lemon juice, with garlic and honey and poured it over the salmon when it came out of the oven.

    The only extra step I take here is to put the vegetables in a bowl and toss them well with olive oil, salt, and pepper.  I think it really slathers the veggies with oil and flavor.  No need to use a ton of oil if you do it this way.

    I always have Whole Foods frozen salmon in my freezer.  It's easy to thaw in the fridge and doesn't have a yucky frozen flavor to it.

    Ingredients

    • 3 pieces salmon
    • 2 tablespoon olive oil
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper
    • 1 bunch broccolini
    • 1 cup cherry or grape tomatoes
    • 2 cloves garlic, minced
    • 1 tablespoon honey
    • 1 lemon
    • 1 teaspoon dried basil

    Instructions

    • Preheat oven to 400 degrees.  Place salmon on sheet pan and drizzle with 1 tablespoon of olive oil and salt and pepper.
    • Place vegetables in a bowl and toss well with 1 tablespoon oil, 2 tablespoon minced garlic and more salt and pepper.  Put veggies on sheet pan around the salmon.
    • Roast for about 15-19 minutes or until salmon flakes.
    • In another small bowl add 2 tablespoon lemon juice, 2 teaspoon lemon zest and 1 tablespoon honey.  Whisk well.
    • Pour over salmon and veggies after removing from oven and serve immediately.  Add more salt and pepper to taste.
