Substitutions
Play around with these ingredient swaps:
- Ground beef: Substitute with ground turkey, ground chicken or a plant-based meat alternative for a lighter or vegetarian option.
- Cream of mushroom or cream of chicken soup: Use cream of celery soup, cream of broccoli soup or a homemade creamy sauce as a substitute.
- Tater tots: Swap with frozen hash browns, crushed potato chips or thinly sliced potatoes for a different topping texture.

Variations
Give this Slow Cooker Cowboy Casserole a twist by changing up the flavor direction:
- Cheesy ranch: Stir in 1 to 2 tablespoons of ranch seasoning with the beef and soup mixture.
- Tex-Mex Cowboy: Add a can of diced green chilies and use pepper jack cheese instead of cheddar.
- Loaded: Top with cooked bacon bits, diced tomatoes and extra shredded cheese for a hearty, "loaded" version.

Equipment
Aside from a can opener, you'll just need a hard-working slow cooker.
Storage
Refrigerate: Store in an airtight container for up to 4 days.
Reheat: Microwave or warm in the oven until heated through.
Freeze: Freeze before or after cooking, but add tater tots fresh if freezing uncooked.
