    Easy Hamburger Soup

    Easy Hamburger Soup is loaded with sweet potatoes, carrots, peppers, onions, celery, and fire-roasted tomatoes.  It can be ready in under 30 minutes and lasts well in the fridge for lunches during the week.  Perfect for a chilly day.  {gluten free, dairy free, whole30, paleo}

    We've all made vegetable soup a million times but this Easy Hamburger Soup with Vegetables is different. First of all, I used fire-roasted tomatoes which are loaded with extra flavor.  They char the tomatoes over an open flame before they are diced and canned. I use these all the time now, it doesn't make the soup spicy at all - just flavor.

    Also since I was making this like a hamburger I added my favorite hamburger spice Montreal Steak.  This stuff is so good I always use it on steak and burgers and the family loves it.  It can be pretty salty so watch out how much salt you use with it.

    This soup is completely forgiving and you can add any leftover fresh vegetables you have like broccoli, snow peas, green beans, even cauliflower.  Or you can use all those leftover bags of frozen vegetables that are in the back of your freezer peas, corn, green beans, carrots.

    Ingredients for The Best Easy Hamburger Soup

    • ground beef - I like to use 90% lean. You could also use ground turkey.
    • olive oil - I get mine at Costco.
    • garlic - diced
    • small onion - diced
    • red bell peppers - You can also use green, yellow or orange bell peppers.
    • carrots -  diced
    • celery - diced
    • sweet potatoes - These are so good in soups.  You can also substitute any white, red or russet potatoes or even butternut squash.
    • beef broth -Be sure it's gluten free if needed.
    • fire roasted diced tomatoes - These are the secret ingredient and add so much flavor, I use them in my Instant Pot Taco Soup and my Instant Pot Chicken Tortilla Soup
    • frozen peas or green beans
    • Montreal Steak seasoning - the second secret ingredient
    • tomato paste - This is optional, I prefer not to use it but if you want to make thicker soup add a few tablespoons.

    Instructions for Making Hamburger Soup

    1. In a dutch oven over medium-high heat cook the ground beef until no longer pink.  If you use lean meat you shouldn't have much grease but if you use a different fat content you may need to drain the fat. Remove from pan and set meat aside.
    2. Add one tablespoon of olive oil to the same pan, then add garlic, onion, peppers, carrots, and celery.  Saute for a few minutes until the onions start to become translucent.
    3. Add the beef back to the pot, then add all remaining ingredients.  Turn up the heat and bring it to a boil. Reduce heat to simmer and cook uncovered for about 10-15 minutes while flavors meld.  Taste and add more seasoning if needed. Montreal Steak is very salty so go easy on it.

    Frequently Asked Questions about Making Easy Hamburger Soup

    • What spices can I use in Hamburger Soup?  So many different options.  Try parsley, oregano, dried basil, parsley, sage, bay leaves, chives, garlic, and onion powder, and if you like it spicy try cayenne and crushed red pepper flakes.  Or you can use Italian seasoning which is a delicious mix of spices.
    • How long does hamburger soup last in the refrigerator?  This Easy Hamburger Soup should last four to five days in an airtight container in the refrigerator. It makes a delicious leftover lunch the next day.
    • How do I freeze Hamburger Soup? Cool the soup to room temperature then put it into a heavy-duty freezer bag and lay flat in the freezer. Be sure to put the date on the bag. Will stay good in the freezer for three months.
    • Can I make this soup in the slow cooker?  Sure Slow Cooker directions would be brown the hamburger meat on the stovetop, with the onions, garlic, peppers, carrots and celery. When meat is fully cooked add all ingredients to the slow cooker. Set the slow cooker to high for four hours or cook on low for six hours.
    • What should I serve with Hamburger Soup?  Crusty bread, biscuits, Gluten Free Oyster Crackers or grilled cheese would be the perfect side.

    Feel free to use regular diced tomatoes if you don't have fire roasted.  
    Be sure to use gluten free beef broth if needed.

      I had never been an advocate of hamburger soup until I made this recipe. This is the best hamburger soup with a vegetable recipe I have ever tried. It's flavorful and filling, and all my friends like it too!
