    Quinoa Breakfast Bowl

    If you haven't tried quinoa for breakfast yet, it's time to start with this Quinoa Breakfast Bowl with apples and almond butter. Topping it with creamy almond butter, crisp apples and vegan chocolate chips make it so delicious. {gluten free, vegan}

    Another Super Bowl down - what an exciting game! We were on the edge of our seats while football history was being made.  Leave it to Tom Brady to come through for the fifth time.

    We are all huge Patriots fans and couldn't have been more excited.  I know people love to hate him but you can't deny he is an amazing athlete and so fun to watch. Did you see when he brought his babies up to the podium?  Aww.

    Whether you are training to be a prime athlete like Tom Brady or not you'll love this Apple and Almond Butter Breakfast Quinoa.  I love quinoa any way I can get it, even breakfast.

    I started eating it in this savory Quinoa Breakfast Bowl with Egg, Tomatoes, and Avocado.  I love that runny egg on top.

    And I'm constantly eating it in salads like this Detox Quinoa Salad with Turmeric Tahini Dressing and this Late Summer Quinoa Grain Bowl.

    This sweet breakfast bowl can be topped with any healthy toppings you like to change it up.  I meal prep a big batch of quinoa in my rice cooker on Mondays so it's easy for me to throw this together on the weekdays.  Sometimes it's my lunch.

    Ingredients

    • 1 cup cooked quinoa I used Bob's Red Mill tri-color
    • ¼ cup coconut milk or almond
    • 1 tablespoon almond butter
    • 1 apple sliced
    • 1 tablespoon vegan chocolate chips I used Enjoy Life
    • 1 teaspoon chia seeds
    • 2 tablespoon flaked coconut

    Instructions

    • Add 1 cup of cooked quinoa in a bowl and microwave it for 30 seconds to warm it up.
    • Add coconut milk to your desired consistency.
    • Top with toppings and enjoy.

      I am not a Tom Brady fan, but I'm also not a Falcons fan, so I was over here just cheering whenever a great play was made. And you are right, no one can deny Tom Brady is great as his job!! Glad your team won though! Wahoo to that! And double wahoo to this quinoa breakfast bowl!! Quinoa is one of my favs so I totally need to add this to my breakfast rotation! LOVE the almond butter and apples in here! Such a nutritious and delicious way to start the day! Cheers!

      What a delicious breakfast bowl Gorgeous photos too! As a resident of New England, I loved the exciting game. Rainy/snowy day for the parade, but that should be exciting too!

      I have GOT to get into the quinoa porridge game. Don't get me wrong, mama loves her oatmeal, but a little change would be so nice. Particularly if it involves almond butter.
