Happy Monday! Hope you guys had a great weekend. My daughter Maddie's 12th birthday was this weekend so we planned a big sleepover with 10 girls and had the basement all decorated for the girls to crash down there.
Unfortunately, she woke up sick on Friday and we had to cancel it. It was so sad! It's hard to see your kids broken hearted, isn't it? But as I always say, things could be so much worse for you - so get over it. Well, I don't say that exactly but she gets my meaning. I want my kids to know how blessed they are and not take that for granted.

If so, let's try something different. These parfaits are made with coconut yogurt which I prefer but you can sub high protein greek plain yogurt too. I always have quinoa made in my fridge so it's easy to layer this up in the morning. Pack in some berries or your favorite fruit and you are good to go. Add a drizzle of maple syrup if you need some extra sweetness.
These can be made ahead and kept in the fridge for two days.

Quinoa Yogurt Parfait
Ingredients
- 1 ½ cups cooked quinoa
- 1 cups plain coconut yogurt
- handful of berries I used blueberries, raspberries, and currants
- 1 tablespoon of honey or maple syrup optional
Instructions
- Place quinoa in the bottom of two glasses.
- Top with coconut yogurt.
- Drizzle with maple syrup if using and top with berries.
- Can be stored in fridge for two days.

I can't say I have ever had quinoa for breakfast but it's just as healthy as oats or chia. This parfait is right up my alley. I love a parfait for breakfast or even a dessert and this one has all the ingredients necessary for parfait success. Yum!

I am absolutely ready for new ideas for breakfast. I am in a hum-drum pattern of egg this, egg that. This would be a welcome break. So sorry about your daughter getting ill. We had a similar situation where my son just recently had a birthday and his cousin and his little bestie both got sick and couldn't celebrate. He was bummed, and yet I wish I could make up for that!
