    Paleo Quiche Cups

    Are you looking for a portable high protein, low carb breakfast to keep you full until lunch?  If so, try these Paleo Quiche Cups.  They are full of sweet potatoes, spinach and bacon and easy to eat on the go.  {paleo, whole30, gluten free}

    Seasonal Cravings got a facelift and I love it.  I was so lucky to find Julie from Deluxe Designs to help me create my new look.  She is so talented and has some really great ideas about how to stand out in a sea of food blogs.  She was so patient with me...we exchanged as least 8,629 emails about this and she never once complained. Thanks, Julie!  She created a mock site for me so we could go through some changes and see how I liked them.  It's almost impossible to do a site redesign without seeing them in real time.

    We are still tweaking a few minor changes but all in all, I love it and I'm so thankful to Julie for all her hard work.  She has created some beautiful sites so be sure to check her out at Deluxe Designs.

    Paleo Quiche Cups with sweet potatoes and spinach

    I feel like I have a great start ticking off my to-dos of 2017.  I have been eating healthy and meal planning like a pro - yes, I know it's only been a few days but let me celebrate my small victories.  These Paleo Quiche Cups have been a godsend for quick healthy breakfasts on the go.  Hubby takes them in the car with him on his long commute to DC.

    I filled these with diced sweet potatoes, onions, bacon and spinach.  Sauteing these babies together means they get covered in bacon grease and have so much flavor.   My Paleo Quiche Cups are cheese free but feel free to add some parmesan or cheddar but just remember they won't be paleo anymore.

    I also love these Bacon and Egg Cups for a portable paleo, whole30 approved breakfast.

    Paleo Quiche Cups

    Ingredients

    • 1 tablespoon olive oil
    • 1 small onion diced
    • 1 ½ cups sweet potatoes diced small
    • 3 pieces bacon whole30, paleo approved if necessary, , chopped
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 8 eggs
    • ½ cup coconut or almond milk
    • 1 ½ cup chopped spinach

    Instructions

    • Preheat oven to 325 ºF.
    • Heat a skillet to medium high and add chopped bacon. Cook for a few minutes, stirring.
    • Add sweet potatoes and onions. Add oil if the pan needs it.
    • Saute for about five minutes until potatoes are almost cooked through. Don't overcook at this point because don't want soft potatoes.
    • Remove from heat.
    • In a large bowl whisk eggs, milk, salt, and pepper.
    • Stir in spinach and potato mixture.
    • Spray a muffin tin with cooking spray and divide egg mixture evenly among cups (about ½ cup).
    • Cook for about 25 minutes or until they are firm.
    • These can be stored in the fridge in an airtight container for up to four days.

        I haven't tried to freeze them yet bc we eat them so fast but let me know how it goes! It might make them soft when they are reheated from frozen. Thanks for your question.

      I love the new look Karen!! You both did an awesome job! Nice and easy to navigate.
      I also love these little breakfast cups. Tom and I are trying to work on cutting some carbs from our diet this year. These look filling where we wouldn't miss a piece of toast alongside. Love the addition of the sweet potatoes instead of regular potatoes too!

      Thank you for this great recipe. I'm doing whole30 right now and they were the perfect breakfast to keep me on track this week! I made a batch on Sunday and it lasted all week, just had my final one... yummy! Will definitely make it again for next week!
