Happy Friday peeps! I'll bet you are so ready for the weekend just like me. I swear sometimes I feel like I just run from one item on my list to the next. I know it's not a healthy way of life but some weeks are like that!
This week I had not one but two failed recipes. It happens more than I care to admit. Most recipes I have tried more than once to make sure they are good enough for you guys. This week I tried a beef stew but changed it up a bit and messed it up. Too much red wine (is that really possible?) Even though I wouldn't put it on the blog hubby and I ate it with no qualms. Will be redoing that one for sure.
My other fail was almond butter cups with pumpkin. I'm obsessed with peanut butter cups and have been trying to make them healthier so I can eat them non-stop. Don't judge - they are healthy I said!
These Mini Peanut Butter Cups are so dang good but I can't eat these non-stop! The combo of almond butter and pumpkin just tasted a bit off so I'm back to the drawing board on that one too. Ugh, some weeks are like this!
On the other hand, I had this Mango Carrot Chia Smoothie that was a hit. It's so refreshing and a great pick me up for that afternoon slump when I want chocolate or Starbuck's or both.
That is the hardest time of the day for me to control my eating. The kids come home from school and they are starving so they are busy stuffing their faces. It's hard for me not to do the same. A smoothie is great because it's sweet and I can sip it for a long time.
This smoothie is full of mango and carrots and sweetened with honey. My frozen mango wasn't very sweet but you may find that you don't need honey. The chia seeds add fiber that helps to keep me full until dinner.

Mango Carrot Chia Smoothie
Ingredients
- 1 cup frozen mango chunks
- 1 ½ cups coconut or almond milk adjust to taste for thinner or thicker smoothie
- 1 large carrot chopped
- 1 tablespoon chia seeds
- 1 teaspoon honey optional and adjust to taste
- a handful of ice
Instructions
- Throw all ingredients into a blender and mix. Adjust to taste.
- For thicker smoothie use more ice and less milk.
- For sweeter smoothie add more honey.

This is so good! I was at the cutting board chopping carrots when this came through and had to make it immediately. I used rice milk and I didn't need any honey - I swear by Trader Joes frozen mango - or ice cubes. I would definitely make this again when I want a smoothie that is not too sweet. Oh, the woe of failed recipes, Karen! I feel you. But I love this smoothie. I agree with Sarah - I'm a big fan of TJ's frozen mango. Been experimenting with carrot recipes lately and have a bunch of carrots on hand so I will be trying this soon - love the chia seed addition!
