    Roasted Maple Sweet Potatoes and Cranberries

    Roasted Maple Sweet Potatoes and Cranberries will be a sure hit at your Thanksgiving celebration.  The cranberries become so sweet and juicy when roasted with maple syrup and the sweet potatoes get a nice caramelization. {gluten free, paleo}

    Oh my gosh, I have had the most frustrating two days.  If you are not a blogger and don't want to hear my rant, then ignore me for a sec.  I installed a new plugin that brought my site to the ground.  It was a disaster and after spending hours on the phone and rebuilding my site, brick by brick, I'm back.  But I have scars...from beating my head against the wall. Running a blog is not all glam like you might think!  Ha, just kidding.  No glam either.

    Anywho, Thanksgiving is right around the corner. Do you have your knock out recipe yet? That one that everyone is surprised by?  The recipe they all ask for later?  You can just say, "Oh this?  I just whipped this up on a whim!"

    You go girl.

    Roasted Maple Sweet Potatoes with Cranberries on a sheet pan

    This is a gorgeous show-stopping side dish.  I mean, who roasts cranberries?

    Well, before this recipe I never had.  They are gorgeous!  They pop and get all soft and juicy.  Topping them with maple syrup helps to cut down on some of the tartness so adjust as necessary. The combo of cranberries and sweet potatoes is a match made in heaven.

    Save yourself and buy the precut sweet potatoes.  If this were a dish for Monday night, I might say, save some $ and cut them yourself, but this is for Thanksgiving and you don't want to be pulling your hair out.

    Ingredients

    • 1 package cubed sweet potatoes 32 oz.
    • 2 cups fresh cranberries washed
    • 3-4 tablespoon pure maple syrup
    • 2 teaspoon orange zest
    • juice of half an orange
    • olive oil
    • salt to taste

    Instructions

    • Preheat oven to 400°.
    • Lay sweet potatoes out on a sheet pan and drizzle with olive oil, 2 tablespoon maple syrup and bit of salt.
    • Lay cranberries on another sheet pan. Drizzle with 1 tablespoon maple syrup. Stir.
    • Roast sweet potatoes for about 15 min, then put in pan of cranberries and cook both for about 10 minutes more. Cooking times will vary.
    • Do not overcook cranberries. They will start to burst when they are ready.
    • Toss all together and drizzle with a bit more syrup if necessary. Drizzle the fresh orange juice and top with orange zest.
    • Serve immediately.

      Love this! I make something very similar but I add a little feta cheese and balsamic to make it more savory. Love this sweeter version!

      Aw! I'm sorry about the plugin. I'm always worried that I'll choose the wrong one by mistake. But these bright little jeweled cranberries are the perfect comeback. And it's so important to have easy side dishes like this one, because you know you'll be making so many other things, too.
