    Skinny Cucumber and Tomato Salad

    This Skinny Cucumber and Tomato Salad is a healthy and easy to prepare option for busy summer days.  It stays fresh in the fridge for up to four days and it is super light, gluten-free and healthy.  It's full of fresh, crunchy vegetables and protein filled black beans.

    Summer wouldn't be summer without some type of family injury, would it?  Well, my son Evan broke his wrist at goalie camp.  He was loving it so much and got hit by a ball in goal the second day and fractured his wrist.

    No more goalie camp, no basketball camp next week, no flips off the diving board, no bicycle and on and on.

    No. More. Summer.

    That's a hard thing to accept when you are 13 years old and summer has just begun.  I feel so bad for him. He is in a moldable cast and can still get in the pool thank goodness.

    My question now is what do you do all summer when you can't play any sports?  Play electronics?  Not, so I need some new and creative ideas. Art camp?  Computer camp?  Basket weaving?  Weed the yard?  Help!

    Because my family is so busy, I am always on the lookout for a salad that is easy to prep and stays fresh in the refrigerator.  After being in Boston and eating out every meal, I need a super skinny salad to help me reset. This Skinny Cucumber and Tomato Salad fits the bill.

    The crunchy vegetables give it a nice fresh bite while the black beans help fill me up.  It tastes great over leftover grilled chicken or fish. Serving it in a halved avocado is a great way to mix things up and they taste delicious together.  You can also just add chopped avocado to the salad but make sure to do that just before serving to avoid brown avocados.

    Ingredients

    • 1- pint multi-colored grape tomatoes halved
    • 1 English cucumber diced
    • 5-8 mini peppers chopped
    • 1 can black beans rinsed
    • ½ cup cilantro parsley or basil chopped
    • 1 lime juiced
    • salt and pepper to taste

    Instructions

    • Gently toss all ingredients in a large bowl and add the juice of one lime. Add salt and pepper and more lime juice to taste.
